Stir-Fried Razor Clams with Garlic Moss

Note:Razor clams can be quite sandy. Proper cleaning is crucial.
Ingredients:
Razor clams (cleaned and soaked)
Garlic moss (or other leafy greens)
Garlic
Ginger
Dried chili flakes (optional)
Shaoxing wine
Light soy sauce
Oyster sauce
Cornstarch
Salt
Sugar
Vegetable oil
Equipment:
Large bowl
Chopping board
Knife
Wok or large skillet
Heatproof spatula

Steps:
Preparation:
1. Clean Razor Clams:
Soak razor clams in salted water for several hours to expel sand.
Change the water multiple times.
Scrub the clams under running water to remove any remaining sand.
If necessary, remove the tough outer skin.
2. Prepare Garlic Moss:
Wash garlic moss thoroughly.
Cut into desired length.
3. Prepare Garlic and Ginger:
Mince garlic and ginger.
Cooking:
1. Heat Oil:
Heat vegetable oil in a wok or large skillet over high heat.
2. Stir-fry Clams:
Add razor clams to the hot oil and stir-fry until they open.
Remove cooked clams and set aside.
3. Sauté Aromatics:
Add garlic, ginger, and dried chili flakes (if using) to the wok. Stir-fry until fragrant.
4. Stir-fry Garlic Moss:
Add garlic moss to the wok and stir-fry until wilted.
5. Combine Ingredients:
Return the cooked clams to the wok.
Add Shaoxing wine, light soy sauce, oyster sauce, cornstarch slurry (cornstarch mixed with water), salt, and sugar.
Stir-fry until the sauce thickens and coats the clams and garlic moss.
6. Serve:
Serve immediately while hot.

Tips:
For a richer flavor, you can add a splash of sesame oil at the end.
If the clams are not fully cooked, continue cooking for a short time.
Adjust the amount of salt and sugar to your taste preference.
For a spicier dish, increase the amount of dried chili flakes.
