Vegetable Manchurian Fried Rice

Ingredients:

For Vegetable Manchurian:

1/2 cup finely chopped cabbage

1/4 cup finely chopped carrots

1/4 cup finely chopped onion

1/4 cup finely chopped green bell pepper

1 tbsp corn starch

1 tbsp all-purpose flour

1 tsp ginger-garlic paste

1/2 tsp red chili powder

1/4 tsp black pepper powder

Salt to taste

Oil for deep frying

For Manchurian Gravy:

2 tbsp oil

1 tsp ginger-garlic paste

1/2 onion, finely chopped

1/2 green bell pepper, finely chopped

1 tomato, finely chopped

1 tbsp soy sauce

1 tbsp tomato ketchup

1/2 tsp red chili sauce

1/4 tsp white pepper powder

1 cup vegetable stock

Corn starch slurry (1 tbsp corn starch + 2 tbsp water)

Salt to taste

For Fried Rice:

2 cups cooked rice

2 tbsp oil

1 onion, finely chopped

1 carrot, finely chopped

1 green onion, finely chopped

2 cloves garlic, minced

Soy sauce to taste

Salt to taste

Vegetable Manchurian Fried Rice

Instructions:

Preparing the Vegetable Manchurian:

1. In a bowl, combine cabbage, carrots, onion, and green bell pepper. Squeeze out excess water.

2. Add corn starch, all-purpose flour, ginger-garlic paste, red chili powder, black pepper powder, and salt. Mix well.

3. Shape the mixture into small balls.

4. Heat oil in a deep pan for deep frying.

5. Fry the Manchurian balls until golden brown and crispy. Drain on a paper towel.

Preparing the Manchurian Gravy:

1. Heat oil in a wok or pan. Add ginger-garlic paste and saute for a few seconds.

2. Add onion, green bell pepper, and tomato. Saute until softened.

3. Add soy sauce, tomato ketchup, red chili sauce, and white pepper powder. Stir well.

4. Pour in vegetable stock and bring to a boil.

5. In a small bowl, mix corn starch with water to make a slurry. Add to the gravy to thicken.

6. Add the fried Manchurian balls to the gravy and coat well.

7. Adjust salt to taste.

Preparing the Fried Rice:

1. Heat oil in a wok or pan. Add onion, carrot, and green onion. Saute until softened.

2. Add minced garlic and saute for a few seconds.

3. Add cooked rice and break it up with a spatula.

4. Season with soy sauce and salt.

5. Stir-fry for a few minutes until heated through.

Vegetable Manchurian Fried Rice

Assembling the Dish:

1. Serve the fried rice on a plate.

2. Top with Vegetable Manchurian in gravy.

Tips:

For a richer flavor, use chicken or vegetable broth instead of water for the Manchurian gravy.

Adjust the spice level according to your preference.

You can add other vegetables like peas or corn to the fried rice for added flavor and texture.
