Beef and Broccoli Stir-Fry

Ingredients:

 300 grams (10.5 ounces) beef, thinly sliced

 1 head of broccoli, cut into florets

 1/2 onion, thinly sliced

 1 carrot, julienned

 1 small piece of ginger, minced

 2 cloves of garlic, minced

 2 tablespoons soy sauce

 1 tablespoon oyster sauce

 1 tablespoon Shaoxing wine

 1 tablespoon cornstarch

 2 tablespoons vegetable oil

 Salt and sugar to taste

Instructions:

1. Prepare the ingredients: Slice the beef thinly, about 5 mm thick. Wash the broccoli and cut it into florets. Slice the onion and carrot. Mince the ginger and garlic.

2. Marinate the beef: In a bowl, combine the sliced beef, soy sauce, oyster sauce, Shaoxing wine, cornstarch, salt, and sugar. Stir well to coat the beef evenly. Marinate for 15 minutes or more to allow the flavors to penetrate.

3. Stir-fry the broccoli: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the broccoli florets and stir-fry for 3-4 minutes, or until they are slightly softened but still retain their bright green color. Transfer the broccoli to a plate and set aside.

4. Stir-fry the beef: Add another tablespoon of oil to the wok or skillet. Add the marinated beef and stir-fry in batches until browned and cooked through. Transfer the cooked beef to a plate and set aside.

5. Stir-fry the onion and carrot: Add the remaining tablespoon of oil to the wok or skillet. Add the minced ginger and garlic and sauté for 30 seconds until fragrant. Add the sliced onion and julienned carrot and stir-fry for 3-4 minutes, or until softened.

6. Combine and finish: Return the cooked beef and broccoli to the wok or skillet. Add the stir-fried onion and carrot. Stir-fry everything together until well combined. Season with salt and sugar to taste.

 Ensure the beef is thoroughly marinated for tender and flavorful results.

 Avoid overcooking the broccoli to prevent it from becoming mushy.

 Feel free to customize the dish by adding other vegetables of your choice, such as mushrooms or bell peppers.
