Sesame Chicken

Ingredients:
For the Chicken:
500g (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon oyster sauce
A pinch of black pepper
1 thumb-sized piece of ginger, grated
2-3 cloves garlic, minced
White sesame seeds, for garnish
For the Sauce:
2 tablespoons honey
4 tablespoons ketchup
1 tablespoon sugar
Water, as needed
For the Batter:
1 egg
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
150ml (5 fl oz) cold water
2 tablespoons oil
Instructions:
1. Marinate the Chicken: In a large bowl, combine the chicken, soy sauce, sesame oil, oyster sauce, and black pepper. Toss to coat evenly. Cover and marinate in the refrigerator for 2-3 hours.
2. Prepare the Sauce: In a small bowl, whisk together the honey, ketchup, sugar, and water until smooth. Set aside.
3. Make the Batter: In a large bowl, whisk together the egg, flour, cornstarch, and baking powder until smooth. Gradually whisk in the cold water until a batter forms. Stir in 2 tablespoons of oil.
4. Fry the Chicken: Heat about 2 inches of oil in a large pot or deep fryer to 170°C (325°F). Dip each piece of chicken in the batter, coating evenly. Carefully lower the chicken into the hot oil and fry until golden brown and crispy, about 3-4 minutes per batch. Drain on a wire rack.
5. Make the Sweet and Sour Sauce: In a large wok or skillet, heat a tablespoon of oil over medium heat. Add the ginger and garlic and cook until fragrant, about 30 seconds. Pour in the prepared sauce and bring to a simmer. Cook until thickened, about 2-3 minutes.
6. Assemble the Sesame Chicken: Add the fried chicken to the wok or skillet with the sauce and toss to coat evenly. Sprinkle with white sesame seeds and serve immediately over rice or noodles.

Tips:
Make sure the chicken is well marinated for maximum flavor and tenderness.
Control the oil temperature when frying the chicken. Too low and it won’t cook through, too high and it will burn.
Adjust the sauce’s thickness to your liking.
You can substitute chicken thighs or drumsticks for the chicken breasts.
Add a pinch of chili powder to the sauce for a spicy kick.
