Hot and Sour Soup Recipe
Ingredients:
200g chicken or pork, thinly sliced
200g tofu, cubed
2 eggs, beaten
50g dried wood ear mushrooms, soaked and sliced
50g bamboo shoots, sliced
1 scallion, thinly sliced
1 piece ginger, julienned
2 cloves garlic, minced
2 tablespoons vinegar
1/2 teaspoon white pepper
1 tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon sugar
1000ml water or chicken broth
2 tablespoons cornstarch
2 tablespoons water
Instructions:
1. Prepare the ingredients. Slice the chicken or pork, tofu, wood ear mushrooms, and bamboo shoots. Thinly slice the scallion, julienne the ginger, and mince the garlic.
2. Stir-fry the ingredients. Heat oil in a pot over medium heat. Stir-fry the chicken or pork until it changes color. Then add the tofu and stir-fry until golden brown. Add the wood ear mushrooms and bamboo shoots and stir-fry until cooked through.
3. Make the soup. Pour the water or chicken broth into the pot and bring to a boil. Add the stir-fried ingredients, vinegar, white pepper, soy sauce, salt, and sugar.
4. Beat the eggs. Beat the eggs in a bowl until they are well combined.
5. Thicken the soup. Combine the cornstarch and water in a small bowl and stir until smooth. Gradually whisk the cornstarch slurry into the soup until it thickens.
6. Drizzle in the egg ribbons. Bring the soup to a boil and then slowly drizzle in the beaten eggs, stirring constantly to form thin ribbons.
7. Serve. Ladle the hot and sour soup into bowls and garnish with scallions.

Tips:
Adjust the amount of vinegar to taste for your desired level of sourness.
Add other vegetables to your liking, such as mushrooms, enoki mushrooms, or glass noodles.
Use cornstarch slurry to thicken the soup, or use egg whites for a lighter broth.
Add a drizzle of sesame oil for extra flavor.

Use store-bought chicken or pork broth to save time.
Substitute cornstarch slurry with egg whites for a clearer broth.
Simmer the soup for 10 minutes after bringing it to a boil for a more flavorful soup.
