Lo Mein: Detailed Ingredients and Precise Cooking Steps

Ingredients

1 pound (454 grams) Lo Mein noodles or spaghetti/linguini/fettuccine
2 tablespoons stir-fry oil
1 medium onion, thinly sliced
2 celery stalks, thinly sliced
2 carrots, thinly sliced
1/2 cup (60 grams) bamboo shoots, thinly sliced
1/2 head cabbage or napa cabbage, thinly sliced
1 cup (150 grams) bean sprouts
1 tablespoon minced garlic
1 teaspoon minced ginger

Sauce

3 tablespoons soy sauce
2 tablespoons oyster sauce
1-2 tablespoons mushroom sauce or dark soy sauce
3 tablespoons water/vegetable/chicken broth
A pinch of white pepper
1/4 teaspoon sesame oil
1 tablespoon white sesame seeds (optional)

Instructions

  1. Prepare the ingredients. Wash and thinly slice or chop all vegetables. Mince the garlic and ginger. Combine all sauce ingredients in a bowl and set aside.
  2. Cook the noodles. Add 1 tablespoon salt to boiling water, then add the noodles. Cook for the time indicated on the package instructions, or until the noodles are cooked through but still slightly chewy. Drain and set aside.
  3. Stir-fry the vegetables. In a large wok or skillet, heat the oil over medium heat. Add the onion, celery, and carrots and stir-fry until softened, about 5 minutes.
  4. Add the bamboo shoots and cabbage/napa cabbage and continue to stir-fry for 3-4 minutes, until the vegetables are softened.
  5. Add the bean sprouts, minced garlic, and minced ginger and stir-fry until fragrant, about 30 seconds.
  6. Add the sauce and stir to combine. Bring the sauce to a boil, then reduce heat to medium-low.
  7. Add the cooked noodles and toss to coat evenly with the sauce.
  8. Sprinkle with white sesame seeds (optional) and serve immediately. Tips You can add other vegetables to your liking, such as broccoli, mushrooms, or peas.
    You can substitute or supplement the vegetables with a protein such as chicken, beef, shrimp, or tofu.
    You can use store-bought Lo Mein sauce or make your own.
    For the best flavor, use fresh ingredients and high-quality soy sauce.
