Char Siu

Ingredients:
500 grams (1 pound) pork shoulder or pork belly
1 tablespoon Chinese five-spice powder
2 tablespoons soy sauce
2 tablespoons sugar
2 tablespoons honey
1 tablespoon hoisin sauce
1 tablespoon oyster sauce
2 tablespoons minced garlic
1 tablespoon minced ginger
1 tablespoon Shaoxing wine
1 tablespoon vegetable oil

Instructions:
- Make the marinade: In a bowl, combine the Chinese five-spice powder, soy sauce, sugar, honey, hoisin sauce, minced garlic, minced ginger, and Shaoxing wine. Whisk until well combined.
- Marinate the pork: Slice the pork into pieces about 2 cm (1 inch) thick. Place the pork slices in the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Line a baking rack with aluminum foil and place the marinated pork slices on the rack.
- Roast the pork: Place the baking rack in the oven and roast for about 20 minutes. Then, flip the pork slices and continue to roast for 15-20 minutes more, or until the pork is golden brown and caramelized.
- Baste the pork: During roasting, baste the pork slices with the marinade every 10-15 minutes to keep them moist and add flavor.
- Remove from the oven: Once the pork is cooked through, remove it from the oven and serve immediately.

Tips:
Use high-quality pork: Char Siu is typically made with pork shoulder or pork belly. Choose pork with a good amount of fat, as this will make it more flavorful and juicy when roasted.
Don’t overmarinate the pork: Overmarinating can make the pork dry and tough.
Baste the pork frequently during roasting: This will help to keep the pork moist and add flavor.
Use a roasting rack or oven to cook the pork: A roasting rack will give Char Siu a smoky flavor, while an oven will cook the Char Siu evenly.
