Mu Shu Chicken

Ingredients:
250 grams (9 ounces) chicken breast, cut into thin strips
2 eggs
50 grams (1.8 ounces) black fungus, soaked and shredded
1 cucumber, shredded
1 carrot, shredded
1 scallion, thinly sliced
1 slice ginger, thinly sliced
1 tablespoon Shaoxing wine
1 tablespoon soy sauce
1 teaspoon oyster sauce
1 tablespoon cornstarch
Salt to taste
Sugar to taste
Oil as needed

Instructions:
- Prepare the ingredients:
Marinate the chicken strips with Shaoxing wine, soy sauce, oyster sauce, cornstarch, salt, and sugar for 15 minutes.
Soak and shred the black fungus.
Shred the cucumber and carrot.
Thinly slice the scallion and ginger. - Make the egg crepes:
Whisk the eggs together with a pinch of salt and Shaoxing wine.
Heat a pan with oil and pour in a thin layer of egg mixture.
Cook until the egg crepe is set, then flip and cook briefly on the other side.
Cut the egg crepe into thin strips. - Stir-fry Mu Shu Chicken:
Heat a pan with oil and stir-fry the marinated chicken strips until they change color.
Add the black fungus, cucumber, carrot, scallion strips, and ginger slices.
Stir-fry until the vegetables are tender.
Add the egg strips, salt, and sugar to taste. - Make the pancakes:
Combine the flour, water, and salt to form a dough.
Let the dough rest for 30 minutes.
Roll the dough into thin pancakes and cook them until they are lightly browned. - Assemble and enjoy:
Place a spoonful of Mu Shu Chicken filling on a pancake.
Add your favorite toppings, such as hoisin sauce, cilantro, and bean sprouts.
Roll up the pancake and enjoy!

Tips:
Cut the chicken breast into thin strips so that it cooks evenly.
Add a pinch of black pepper to the chicken marinade for extra flavor.
Don’t overcook the Mu Shu Chicken filling; the vegetables should still be crisp.
You can make the pancakes ahead of time or cook them just before serving.
Additional suggestions:
Feel free to add other vegetables to the filling, such as bean sprouts, celery, or onions.
Use different types of meat, such as beef, lamb, or duck.
Make the pancakes with whole wheat flour for a healthier option.
