Stir-fried Chinese Broccoli with Oyster Sauce

Ingredients:

 Chinese Broccoli:

     1 pound (450 grams) Chinese broccoli, trimmed and cut into 2-inch pieces

     1 tablespoon vegetable oil, for blanching

 Sauce:

     1 tablespoon oyster sauce

     1 tablespoon soy sauce

     1 tablespoon sugar

     1 teaspoon cornstarch

     1 tablespoon vegetable oil, for stir-frying

     2 cloves garlic, minced

     1/4 teaspoon ground white pepper

Stir-fried Chinese Broccoli with Oyster Sauce

Instructions:

1. Blanch the Chinese Broccoli:

     Bring a large pot of water to a boil over high heat.

     Add the Chinese broccoli to the boiling water and blanch for 1-2 minutes, or until tender-crisp.

     Drain the blanched broccoli in a colander and rinse under cold water to stop the cooking process.

     Set aside to drain and cool slightly.

2. Prepare the Sauce:

     In a small bowl, whisk together the oyster sauce, soy sauce, sugar, and cornstarch until smooth.

3. Stir-fry the Chinese Broccoli:

     Heat the vegetable oil for stir-frying in a large skillet or wok over medium-high heat.

     Add the garlic and stir-fry for 30 seconds, until fragrant.

     Add the blanched Chinese broccoli and stir-fry for 3-4 minutes, until the broccoli is evenly heated and slightly softened.

     Pour in the prepared sauce and stir to coat the broccoli evenly.

     Cook for 1 minute more, or until the sauce is thickened and slightly glossy.

     Season with white pepper to taste.

4. Serve:

     Immediately transfer the stir-fried Chinese broccoli to a serving plate or bowl.

     Serve hot over steamed rice or with your favorite protein dish.

Tips:

 For a richer flavor, use dark soy sauce instead of regular soy sauce.

 If you don’t have cornstarch, you can substitute with 1 tablespoon of water.

 You can also add other vegetables to this dish, such as carrots, bell peppers, or onions.

 If you like your food spicy, you can add a pinch of red pepper flakes to the sauce.

 For a more authentic flavor, use a traditional Chinese wok for stir-frying.

 To ensure even cooking and prevent burning, avoid overcrowding the pan when stir-frying the broccoli.
