Tofu Stir Fry With Vegetables

Ingredients:
1 (14-ounce) block extra-firm tofu
2 tablespoons cornstarch
Salt and black pepper to taste
2 tablespoons vegetable oil, divided
1 tablespoon minced garlic
1 tablespoon grated ginger
1 head broccoli, cut into florets
1 cup green beans, trimmed and halved
2-3 green onions, thinly sliced
1/2 red chili pepper, thinly sliced (optional)

For the sauce:
1 tablespoon sesame oil
1/3 cup soy sauce
1/4 cup water
1 tablespoon cornstarch
1-2 tablespoons brown sugar
Toasted sesame seeds, for garnish
Instructions:
1. Prepare the tofu: Wrap the tofu block in paper towels and pat it dry to remove excess moisture. Cut the tofu into 1-inch cubes. In a small bowl, combine the tofu cubes, cornstarch, salt, and black pepper. Toss to coat evenly.
2. Make the sauce: In a small bowl, whisk together the sesame oil, soy sauce, water, cornstarch, and brown sugar. Set aside.
3. Cook the vegetables: Heat 1 tablespoon of vegetable oil in a large wok or nonstick skillet over medium-high heat. Add the broccoli florets and green beans and stir-fry for 3-4 minutes, or until tender-crisp. Transfer the vegetables to a plate and set aside.
4. Cook the tofu: Heat the remaining 1 tablespoon of vegetable oil in the same wok or skillet. Add the tofu cubes and stir-fry for 5-7 minutes, or until golden brown on all sides.
5. Combine the tofu and vegetables: Return the cooked vegetables to the wok or skillet along with the tofu. Pour in the prepared sauce and stir-fry for another 2-3 minutes, or until the sauce is thickened and the vegetables are heated through.
6. Garnish and serve: Garnish with thinly sliced green onions and toasted sesame seeds. Serve hot over steamed rice or noodles.

Tips:
For extra crispy tofu, you can press the tofu cubes between two paper towels for 15-20 minutes before cooking.
If you don’t have broccoli or green beans, you can use other vegetables of your choice, such as bell peppers, carrots, or mushrooms.
To make the stir-fry spicier, add a pinch of red pepper flakes or a chopped chili pepper to the sauce.
For a more flavorful tofu, you can marinate it in a mixture of soy sauce, ginger, and garlic for 30 minutes before cooking.
