Stir-Fried Chinese Broccoli with Garlic

Ingredients:
1 pound Chinese broccoli (gai lan)
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon oyster sauce
1 tablespoon soy sauce
1/2 teaspoon sugar
1/4 teaspoon cornstarch
2 tablespoons water

Instructions:
- Wash the Chinese broccoli and cut it into 2-inch pieces. Separate the stems from the leaves.
- In a small bowl, whisk together the oyster sauce, soy sauce, sugar, and cornstarch.
- Heat the oil in a large wok or skillet over high heat. Add the garlic and cook for 30 seconds, or until fragrant.
- Add the Chinese broccoli stems and stir-fry for 2 minutes, or until they are slightly tender.
- Add the Chinese broccoli leaves and stir-fry for 1 minute more, or until they are wilted.
- Pour in the sauce mixture and stir to coat the broccoli evenly.
- Add the water and bring to a simmer. Cook for 1 minute, or until the sauce has thickened slightly.
- Serve immediately over rice.

Tips:
For a more flavorful dish, marinate the Chinese broccoli in the sauce mixture for 15 minutes before cooking.
If you don’t have oyster sauce, you can substitute 1 tablespoon of soy sauce and 1/2 teaspoon of sugar.
