Steamed Sea Bass

Ingredients:

1 sea bass (about 1 pound)
5 grams ginger, julienned
1 scallion, sliced
2 tablespoons Shaoxing wine
3 tablespoons steamed fish soy sauce
2 tablespoons water

Steamed Sea Bass

Instructions:

  1. Prepare the sea bass: Gut and clean the sea bass, removing the entrails and gills. Trim off the fins and tail. Rinse thoroughly with water and pat dry. Score the fish on both sides a few times to help it absorb the flavors.
  2. Marinate the sea bass: In a bowl, combine the julienned ginger, sliced scallion, Shaoxing wine, steamed fish soy sauce, and water. Mix well. Pour the marinade over the sea bass and gently massage it into the fish. Marinate for 15-20 minutes.
  3. Steam the sea bass: Bring water to a boil in a steamer. Place the steaming rack in the steamer. Transfer the marinated sea bass to a steaming plate and place it in the steamer. Steam for 10-15 minutes over high heat.
  4. Serve: Remove the steamed sea bass from the steamer and discard the excess liquid from the plate. Arrange the julienned ginger and sliced scallion on top of the sea bass and drizzle with steamed fish soy sauce. Serve immediately.

Tips:

Adjust the steaming time based on the size of the fish. For a 1-pound fish, 10-15 minutes should be sufficient.

Customize the sauce to your liking. Add chili flakes for a spicy kick or a touch of vinegar for a tangy flavor.

Steaming is one of the best ways to cook sea bass as it preserves its delicate flavor and tender texture.
