Chicken with Broccoli in Oyster Sauce

Ingredients:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon cornstarch
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 tablespoon Shaoxing wine or dry sherry (optional)
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tablespoon grated ginger
2 cups broccoli florets
1/4 cup chicken broth or water
1 teaspoon sesame oil

Instructions:
- In a medium bowl, combine the chicken, cornstarch, 1 tablespoon oyster sauce, 1 tablespoon soy sauce, and Shaoxing wine or sherry (if using). Mix well to coat the chicken evenly. Marinate for at least 15 minutes, or up to 30 minutes.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the garlic and ginger and stir-fry for 30 seconds, until fragrant.
- Add the marinated chicken and stir-fry for 3-4 minutes, until the chicken is cooked through. Remove the chicken from the pan and set aside.
- Add the broccoli florets to the pan and stir-fry for 2-3 minutes, until the broccoli is tender-crisp.
- Return the cooked chicken to the pan. Pour in the chicken broth or water and 1 tablespoon oyster sauce. Stir to combine.
- In a small bowl, whisk together the cornstarch and 1 tablespoon of water until smooth. Slowly add the cornstarch mixture to the pan, stirring constantly, until the sauce thickens and coats the chicken and broccoli.
- Drizzle in the sesame oil and stir to combine.
- Serve immediately over steamed rice or noodles.

Tips:
For extra flavor, you can marinate the chicken overnight in the refrigerator.
If you don’t have Shaoxing wine or dry sherry, you can substitute with another type of Chinese cooking wine, or simply omit it.
You can also add other vegetables to this stir-fry, such as carrots, bell peppers, or snow peas.
If you want a spicier stir-fry, add a pinch of red pepper flakes to the sauce.
