Ingredients:

2 ounces dried tofu skin, broken into 3-inch pieces
2 tablespoons vegetable oil, divided
2 cloves garlic, minced
1 tablespoon grated ginger
1 red bell pepper, thinly sliced
1 cup broccoli florets
1 cup snow peas
1/4 cup soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
Salt and pepper to taste

Instructions:

  1. Soak the tofu skin: Place the tofu skin in a bowl of warm water and soak for 15 minutes, or until softened. Drain and pat dry.
  2. Prepare the vegetables: Slice the bell pepper, broccoli, and snow peas into bite-sized pieces.
  3. Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey, and sesame oil. Season with salt and pepper to taste.
  4. Stir-fry the tofu skin: Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the tofu skin and stir-fry for 2-3 minutes, or until lightly browned. Remove from the pan and set aside.
  5. Stir-fry the vegetables: Add the remaining 1 tablespoon of oil to the wok or skillet. Add the garlic and ginger and stir-fry for 30 seconds, or until fragrant.
  6. Add the bell pepper, broccoli, and snow peas and stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
  7. Return the tofu skin to the pan: Add the tofu skin back to the pan and stir-fry to combine.
  8. Pour in the sauce: Pour in the sauce and stir-fry for 1 minute, or until the vegetables are coated in the sauce.
  9. Serve: Serve immediately over rice or noodles.

Tips:

You can also add other vegetables to this dish, such as carrots, mushrooms, or onions.
If you don’t have rice vinegar, you can substitute white vinegar or apple cider vinegar.
For a spicier dish, add a pinch of red pepper flakes to the sauce.
Serve this dish with a side of steamed rice or noodles.
