Chili Pork Shreds

Ingredients:

 2 pounds boneless pork shoulder

 2 tablespoons brown sugar

 1 teaspoon garlic powder

 1 teaspoon salt

 1 teaspoon black pepper

 1 teaspoon chili powder

 1/2 teaspoon cumin

 1/4 teaspoon cayenne pepper

 1 small red onion, diced

 2 cups beef broth

 1 (28-ounce) can diced tomatoes, undrained

 1 (28-ounce) can tomato sauce

 1/2 cup barbecue sauce

 2 (15-ounce) cans chili beans, drained and rinsed

 1 teaspoon hot sauce (optional)

Instructions:

1. In a small bowl, combine the brown sugar, garlic powder, salt, pepper, chili powder, cumin, and cayenne pepper. Rub the seasoning mixture all over the pork shoulder.

2. Place the pork shoulder in a slow cooker. Add the onion, beef broth, diced tomatoes, tomato sauce, barbecue sauce, chili beans, and hot sauce (if using).

3. Cover the slow cooker and cook on low for 8-10 hours, or until the pork is very tender and can be easily shredded with two forks.

4. Shred the pork with two forks. Stir the shredded pork back into the chili and serve immediately.

Tips:

 For a spicier chili, add more cayenne pepper to taste.

 You can also add other vegetables to the chili, such as chopped green peppers or corn kernels.

 Top the chili with your favorite toppings, such as shredded cheese, sour cream, or chopped avocado.

Other Notes:

 This recipe can also be made in an Instant Pot. To do so, set the Instant Pot to high pressure and cook for 60 minutes. Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.

 If you don’t have time to slow cook the chili, you can also cook it on the stovetop. To do so, brown the pork shoulder in a large pot over medium heat. Add the onion and cook until softened. Then, add the remaining ingredients and bring to a boil. Reduce heat to low and simmer for 1-2 hours, or until the pork is tender.
