Chive Pancakes

Chive pancakes are a delicious savory option that can be enjoyed as a snack, side dish, or even a light meal. Here’s what you’ll need to make them:

Ingredients:

 Dough:

     1 cup all-purpose flour

     ½ teaspoon salt

     ½ cup boiling water

     2 tablespoons cold water

 Filling:

     ½ cup thinly sliced chives

     1 tablespoon neutral oil (vegetable, canola, peanut)

     Sesame oil (optional)

 Cooking:

     Additional neutral oil for cooking

     Sesame seeds for garnish (optional)

Production Steps:

1. Make the Dough:

     In a large bowl, whisk together the flour and salt.

     Slowly pour in the boiling water, stirring constantly with a wooden spoon until a shaggy dough forms.

     Add the cold water, 1 tablespoon at a time, until the dough comes together and forms a smooth ball. Be careful not to overwork the dough.

     Knead the dough on a lightly floured surface for a few minutes until it becomes elastic.

     Cover the dough with plastic wrap and let it rest at room temperature for 30 minutes.

2. Prepare the Filling:

     While the dough rests, finely chop the chives.

     In a small bowl, combine the chives with 1 tablespoon of neutral oil. You can add a few drops of sesame oil for extra flavor, but it’s optional.

3. Assemble and Cook:

     Divide the dough ball into 6-8 equal pieces. Roll each piece into a small ball.

     On a lightly floured surface, roll each dough ball into a thin circle, about 4-5 inches in diameter.

     Brush the surface of each dough circle with a thin layer of oil.

     Evenly distribute the chive mixture over the dough circle, leaving a small border around the edge.

     Fold the dough circle in half, then fold it in half again to create a quarter circle. Gently press down on the edges to seal.

     Heat a non-stick pan or cast iron skillet over medium heat. Add a thin layer of oil to coat the bottom of the pan.

     Once the oil is hot, carefully place a folded dough piece in the pan.

     Gently press down on the pancake with a spatula to flatten it slightly.

     Cook for 2-3 minutes per side, or until golden brown and crispy.

     You can press down on the pancake occasionally with the spatula to encourage even cooking.

4. Serve and Enjoy:

     Transfer the cooked chive pancake to a plate.

     Repeat steps 3a-3d with the remaining dough and filling.

     Serve the chive pancakes hot, sprinkled with sesame seeds for an extra touch (optional).

     You can enjoy them plain, with a dipping sauce like soy sauce or chili garlic sauce, or stuffed with your favorite savory fillings.

Tips:

  For a flakier texture, you can brush the dough layers with additional oil during the assembly step.

 If the dough is too dry and difficult to roll out, add a teaspoon of water at a time until it becomes manageable.

Be careful not to overcrowd the pan when cooking the pancakes. This can prevent them from crisping up properly.

You can adjust the amount of chives to your preference.
