Materials Required:

For the Paneer Filling:

Paneer (Indian cottage cheese), grated or crumbled

Green chilies, finely chopped

Ginger, finely grated

Cumin powder

Red chili powder

Lemon juice

Production Steps:

Preparing the Paneer Filling:

1. Combine Ingredients:In a mixing bowl, combine grated paneer, finely chopped green chilies, grated ginger, coriander leaves, cumin powder, garam masala, red chili powder, salt, and lemon juice.

2. Mix Well:Mix all ingredients thoroughly until the paneer mixture is well combined and all flavors are evenly distributed.

Preparing the Dough:

1. Knead Dough:In a separate bowl, mix all-purpose flour with water to form a smooth, pliable dough. Knead the dough for about 5-7 minutes until it becomes elastic.

2. Rest Dough:Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Shaping the Potlis:

1. Divide Dough:Divide the rested dough into small equal-sized balls.

2. Roll Dough:Roll each dough ball into a small circle, about 2-3 inches in diameter.

3. Fill with Paneer:Place a spoonful of the prepared paneer mixture in the center of each dough circle.

4. Pouch and Seal:Bring the edges of the dough together to form a pouch, enclosing the paneer filling completely. Pinch the edges firmly to seal the potli.

5. Secure with Toothpick:Insert a toothpick through the center of the potli to secure it tightly.

Deep Frying:

1. Heat Oil:Heat oil in a deep-fryer or a heavy-bottomed pan to the right temperature (around 180°C/350°F).

2. Fry Potlis:Carefully drop the paneer potlis into the hot oil, a few at a time to avoid overcrowding.

3. Cook Until Golden Brown:Fry the potlis until they turn golden brown and crispy on all sides.

4. Drain Excess Oil:Remove the fried potlis from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Serving:

Serve hot paneer potlis with green chutney or tomato ketchup as desired.

Tips:

For extra flavor, you can add other ingredients to the paneer filling like grated cheese, chopped onions, or cashews.

To make the potlis crispier, allow them to cool completely before serving.

Store leftover potlis in an airtight container at room temperature.
