Chinese Banana Fritters

Ingredients:
Bananas: Ripe but firm, about 2-3 pieces
All-purpose flour: 1 cup
Cornstarch: 2 tablespoons
Sugar: 2 tablespoons
Baking powder: 1 teaspoon
Salt: A pinch
Water: About 1/2 cup
Oil: For deep frying
Equipment:
Cutting board
Knife
Mixing bowl
Chopsticks or fork
Deep fryer or large pot

Instructions:
1. Prepare the bananas:
Peel the bananas and cut them into even-sized slices, about 1/4 inch thick.
2. Make the batter:
In a mixing bowl, whisk together all-purpose flour, cornstarch, sugar, baking powder, and salt.
Gradually add water while stirring until you form a smooth batter with a slightly thick consistency.
3. Coat the bananas:
Dip each banana slice into the batter, making sure it is fully coated.
4. Deep fry:
Heat oil in a deep fryer or large pot to about 350°F (175°C).
Carefully add the coated banana slices to the hot oil, working in batches to avoid overcrowding.
Fry until golden brown and crispy, flipping once or twice during cooking. This should take about 2-3 minutes.
5. Drain and serve:
Remove the fried banana slices from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Serve hot with condensed milk or your favorite dipping sauce.

Tips:
For a richer flavor, you can add a teaspoon of vanilla extract to the batter.
If you don’t have a deep fryer, you can use a heavy-bottomed pot for deep frying.
Be careful not to overcrowd the pan when frying, as this can lower the oil temperature and result in soggy fritters.
