Instructions:

1. Marinate the beef: In a large bowl, combine the beef brisket, soy sauce, Shaoxing wine, sugar, ginger, five-spice powder, star anise, cloves, and cinnamon stick. Mix well to coat the beef evenly. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.

2. Cook the beef: Heat a large pot or Dutch oven over medium heat. Add 1 tablespoon of vegetable oil and swirl to coat the bottom. Once the oil is shimmering, add the marinated beef and stir-fry for 5-7 minutes, or until browned on all sides.

3. Simmer the beef: Pour in the beef broth, making sure the beef is fully submerged. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 1-2 hours, or until the beef is tender and easily pierced with a fork.

4. Cook the noodles: While the beef is simmering, cook the noodles according to the package directions. Drain the noodles and set them aside.

5. Prepare the garnishes: Rinse the cilantro and scallions, and chop them finely.

6. Assemble the noodles: Divide the cooked noodles among individual serving bowls. Ladle the tender beef brisket and flavorful broth over the noodles. Garnish with chopped cilantro and scallions. Serve hot and enjoy!
