Beef Chow Fun

Ingredients:
200 grams (7 ounces) dried rice noodles (ho fun)
200 grams (7 ounces) beef, thinly sliced
100 grams (3.5 ounces) bean sprouts
2 eggs
1 scallion, thinly sliced
1 piece ginger, julienned
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
Salt to taste
Pepper to taste
Oil to taste

Instructions:
- Prepare the rice noodles: Soak the rice noodles in warm water until softened, about 10-15 minutes. If the noodles are thick, soak them for 20 minutes. Drain the noodles and set aside.
- Prepare the beef: Slice the beef thinly against the grain. Marinate the beef with a little cornstarch, soy sauce, Shaoxing wine, and pepper for 10-15 minutes.
- Prepare the other ingredients: Wash and drain the bean sprouts. Slice the scallion, julienne the ginger, and mince the garlic. Beat the eggs together in a bowl.
- Cook the beef: Heat a wok or large skillet over high heat. Add a tablespoon of oil and stir-fry the ginger and garlic until fragrant. Add the marinated beef and stir-fry until browned.
- Add the other ingredients: Add the bean sprouts and stir-fry for a minute. Add the rice noodles and stir-fry until heated through.
- Season the dish: Add the soy sauce, dark soy sauce, oyster sauce, sugar, salt, and pepper to taste.
- Add the eggs: Pour in the beaten eggs and stir-fry until scrambled.
- Serve: Serve the Beef Chow Fun immediately.

Tips:
Use a high-quality beef for best flavor.
If you don’t have ho fun, you can substitute with other types of rice noodles, such as pad thai noodles or vermicelli.
Add a splash of Shaoxing wine or Chinese rice wine to the beef marinade for extra flavor.
For a spicier dish, add a pinch of red pepper flakes or a tablespoon of chili oil.
Beef Chow Fun can also be made with other vegetables, such as carrots, onions, or bell peppers.
