Black Pepper Beef

Ingredients:
500g beef tenderloin
1 onion
2 tablespoons black pepper sauce
1 tablespoon soy sauce
1 tablespoon Shaoxing wine
1 tablespoon cornstarch
Oil, as needed

Instructions:
1. Prepare the beef:
Cut the beef tenderloin into thin slices, about 5mm thick.
Place the beef slices in a bowl and add 1 tablespoon soy sauce, 1 tablespoon Shaoxing wine, and 1 tablespoon cornstarch.
Mix well with your hands to coat the beef slices evenly with the marinade.
Marinate for about 15 minutes to allow the beef to absorb the flavors.
2. Prepare the vegetables:
Peel the onion and cut it into thin strips.
3. Stir-fry the beef:
Heat oil in a wok or large frying pan over medium-high heat until it is about 70% hot (when you insert a chopstick into the oil, small bubbles form around the chopstick).
Add the marinated beef slices to the hot oil.
Stir-fry quickly over medium heat until the beef slices change color.
4. Add the vegetables:
Add the sliced onion strips and continue stir-frying until the onions are soft and tender.
5. Season:
Add 2 tablespoons black pepper sauce and stir-fry to coat evenly.
If the taste is not salty enough, add a little more soy sauce to taste.
6. Serve:
Transfer the stir-fried black pepper beef to a plate and serve immediately.

Tips:
Beef tenderloin is a tender cut of meat, so do not stir-fry it for too long to prevent it from becoming tough.
Adjust the amount of black pepper sauce to your liking.
In addition to onions, you can also add other vegetables such as bell peppers, carrots, etc.
To make the beef even more tender, you can use the back of a knife to pound the beef slices before marinating them.
You can also add a little tenderizer to the marinade.
