Stir-fried Green Beans with Minced Pork

Ingredients:
1 pound (450 grams) green beans, trimmed and cut into 1-inch pieces
8 ounces (225 grams) ground pork
2 tablespoons soy sauce
1 tablespoon Shaoxing wine (or dry sherry)
1 tablespoon cornstarch
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tablespoon grated ginger
1 red bell pepper, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions:
1. In a medium bowl, combine the green beans, soy sauce, Shaoxing wine, and cornstarch. Toss to coat evenly and set aside.
2. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spatula, until browned and cooked through, about 5 minutes.
3. Add the garlic, ginger, and red bell pepper to the pan and stir-fry for 1 minute, until fragrant.
4. Add the green beans to the pan and stir-fry for 3-5 minutes, until tender-crisp.
5. Season with salt and pepper to taste.
6. Serve immediately over rice or noodles.

Tips:
For a spicier stir-fry, add a pinch of red pepper flakes or a chopped chili pepper to the pan with the garlic and ginger.
If you don’t have Shaoxing wine, you can substitute dry sherry or rice wine vinegar.
You can also use other vegetables in this stir-fry, such as broccoli, carrots, or snow peas.
If you want to make the stir-fry gluten-free, use gluten-free soy sauce and cornstarch.
