Wonton Soup

Ingredients
Wonton Wrappers
200 grams all-purpose flour
1/2 teaspoon salt
100 milliliters water
Wonton Filling
200 grams ground pork
100 grams shrimp, peeled and deveined
100 grams napa cabbage, finely chopped
1 scallion, finely chopped
1 teaspoon minced ginger
1 tablespoon soy sauce
1 tablespoon Shaoxing wine
1/2 teaspoon salt

500 grams chicken bones
2 liters water
2 scallions
2 slices ginger

Instructions
1. Make the Wonton Wrappers
1. In a large bowl, combine the flour, salt, and water.
2. Knead the dough until smooth, then cover with a damp cloth and let rest for 30 minutes.
3. Roll the dough out into a thin sheet, about 1 millimeter thick.
4. Use a knife or cutter to cut the dough into squares, about 5 centimeters in size.
2. Make the Wonton Filling
1. In a large bowl, combine the ground pork, shrimp, napa cabbage, scallion, minced ginger, soy sauce, Shaoxing wine, salt, and black pepper.
2. Place a small spoonful of filling in the center of a wonton wrapper.
3. Fold the wonton wrapper into a triangle and pinch the edges to seal.
3. Make the Clear Broth
1. Rinse the chicken bones and place them in a pot.
2. Add the water, scallions, ginger, Shaoxing wine, salt, and black pepper.
3. Bring the soup to a boil, then reduce heat and simmer for 1-2 hours, or until the chicken bones are cooked through.
4. Strain the broth to remove the chicken bones and other impurities.
4. Cook the Wontons
1. Bring a pot of water to a boil.
2. Add the wontons to the boiling water and cook until they float to the surface, about 3-5 minutes.
3. Remove the cooked wontons from the water and drain.
5. Assemble the Wonton Soup
1. Ladle the clear broth into bowls.
2. Add the cooked wontons.
3. Garnish with chopped scallions, cilantro, and chili oil to taste.
Tips
If the dough for the wonton wrappers is too dry, add a little water; if it is too wet, add a little flour.
You can adjust the ratio of fillings and seasonings to your liking.
To make the broth clearer, you can blanch the chicken bones in water to remove the blood before using them.
Be careful not to overcook the wontons, or the wrappers may break.
