Materials:

Live mud crabs (preferably Dungeness or Blue Crabs)
Salt
Black pepper

Preparation Steps:
1. Selecting the Crab:Choose live, active crabs with a good weight-to-shell ratio. The shell should be hard and free from cracks.
2. Cleaning the Crab:
Humanely kill the crab by plunging it into boiling water for a few minutes.
Remove the top shell and discard the gills (feathery parts).
Clean the crab thoroughly with running water, removing any impurities.
3. Cutting the Crab:
Cut the crab in half lengthwise.
Remove the apron (triangular part) from the underside.

Cooking Steps:
1. Steaming the Crab:

In a large bowl, combine salt, black pepper, and cornstarch.

3. Deep Frying (Optional):
Heat cooking oil in a wok or deep fryer to 375°F (190°C).
Coat the crab pieces evenly in the dry seasoning mixture.
Carefully lower the crab pieces into the hot oil and fry until golden brown and crispy, about 3-4 minutes.
Remove the crab pieces from the oil and drain on paper towels.
4. Stir-Frying (Alternative):
Heat cooking oil in a wok over high heat.
Coat the crab pieces in the dry seasoning mixture.
Add the crab pieces to the hot wok and stir-fry until crispy, about 3-4 minutes.

Serving:
Transfer the cooked crab to a serving platter.
Garnish with chopped green onions.
Serve immediately with your favorite dipping sauce, such as chili oil or mayonnaise.
Tips:
For a spicier version, increase the amount of black pepper and add chili flakes to the dry seasoning.
To enhance the flavor, marinate the crab pieces in a mixture of soy sauce, Shaoxing wine, and ginger before coating.
