Stir-Fried Crab with Vermicelli Noodles

Materials:
Main Ingredients:
1 live crab (approximately 1.5 kg), cleaned and cut into pieces
200g vermicelli noodles
3 cloves garlic, minced
1 red chili, sliced (optional)
1 green onion, sliced
Fresh coriander leaves, for garnish
Sauce Ingredients:
2 tablespoons oyster sauce
1 tablespoon light soy sauce
1 tablespoon Shaoxing wine
1 teaspoon sugar
1/2 teaspoon white pepper
1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)
Other:
Vegetable oil
Salt to taste

Large wok or frying pan

Production Steps:
Preparation:
1. Clean the crab thoroughly and cut it into pieces.
2. Soak vermicelli noodles in warm water for 5 minutes, then drain.
3. Mince garlic and slice chili and green onion.
4. Prepare the sauce by mixing oyster sauce, light soy sauce, Shaoxing wine, sugar, and white pepper in a small bowl.
Cooking:
1. Heat a wok or frying pan over high heat. Add enough oil to coat the pan.
2. Stir-fry the crab pieces until they turn bright red. Remove from the wok and set aside.
3. Add garlic and chili to the wok and stir-fry until fragrant.
4. Add the vermicelli noodles and stir-fry for 1-2 minutes until heated through.
5. Return the crab to the wok and add the prepared sauce. Stir-fry until the sauce coats the noodles and crab evenly.
6. Thicken the sauce by slowly pouring in the cornstarch slurry while stirring continuously.
7. Add green onion and stir-fry for a few seconds.
8. Taste and adjust seasoning with salt if necessary.
9. Garnish with fresh coriander leaves.

Serve immediately while hot.
Tips:
For a spicier dish, add more chili or use a spicier chili variety.
You can substitute crab with other seafood like shrimp or squid.
For a richer flavor, add a splash of sesame oil at the end.
If the crab is too salty, you may need to adjust the amount of sauce accordingly.
