 1/2 winter melon

 4 dried shiitake mushrooms

 2 cups chicken broth

 1 green onion, green part only, thinly sliced

Production Steps:

1. Prepare the winter melon: Wash the winter melon, remove the green skin, seeds, and pulp. Cut into 2-inch pieces.

2. Cook the winter melon: Place the winter melon in a large saucepan of water. Bring to a boil over high heat. Reduce heat and simmer until the melon is tender, about 20 minutes.

3. Prepare other ingredients: Soak dried shiitake mushrooms in cold water to reconstitute, about 20 minutes. Squeeze out excess water.

4. Combine ingredients: Add the mushrooms, chicken broth, ginger, and ham to the cooked winter melon.

5. Season and serve: Season with salt and pepper to taste. Garnish with green onions.
