Production Steps

Preparing the Dabeli Patty:

1. Boil potatoes until soft, then mash them.

2. Add green chilies, ginger, cumin powder, coriander powder, red chili powder, garam masala, turmeric powder, and salt to the mashed potatoes. Mix well.

3. Shape the mixture into round patties.

4. Heat oil in a pan and fry the patties until golden brown.

Preparing the Dabeli Masala:

1. Roast peanuts, dry red chilies, and cumin seeds until fragrant.

2. Grind them into a fine powder.

3. Add coriander powder, garam masala, amchur, salt, and sugar (if using) to the powder. Mix well.

Assembling the Dabeli:

1. Cut the pav in half and toast it with butter.

2. Apply a generous amount of dabeli masala on the lower half of the pav.

3. Place a fried dabeli patty on top of the masala.

4. Add chopped onions, cilantro, and pomegranate seeds.

5. Sprinkle sev and crushed peanuts.

6. Squeeze lemon juice over the dabeli.

Optional:For a richer flavor, you can add a layer of yogurt or chutney before placing the patty.
