Wonton Noodles Recipe

Ingredients
For the Wonton Wrappers
2 eggs
100 grams all-purpose flour
1/4 teaspoon salt
Water, as needed
For the Filling
200 grams ground pork
100 grams shrimp, peeled and deveined
5 dried shiitake mushrooms, soaked and chopped
1 scallion, finely chopped
1 small piece ginger, minced
1 tablespoon Shaoxing wine
1 tablespoon soy sauce
1 teaspoon oyster sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sesame oil
For the Noodles
200 grams egg noodles or alkaline noodles
For the Sauce
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon chili oil
Chopped scallions, to taste

Instructions
- Make the Wonton Wrappers:
- In a bowl, whisk together the eggs and salt.
- Gradually add the flour, mixing constantly and adding water as needed, until a smooth dough forms.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- Divide the dough into small pieces and roll them out into thin wrappers.
- Make the Filling:
- Soak the shiitake mushrooms in water until soft, then chop them.
- Finely chop the scallion and ginger.
- In a bowl, combine the ground pork, shrimp, shiitake mushrooms, scallion, ginger, Shaoxing wine, soy sauce, oyster sauce, salt, pepper, and sesame oil. Mix well.
- Cook the Noodles:
- Bring a pot of water to a boil. Add the noodles and cook until tender. Drain and set aside.
- Assemble the Wontons:
- Place a small spoonful of filling in the center of a wonton wrapper.
- Fold the wrapper over the filling and pinch the edges to seal, forming a triangle or crescent shape.
- Cook the Wontons:
- Bring a pot of water to a boil. Add the wontons and cook until they float to the surface. Drain and set aside.
- Make the Sauce:
- In a small bowl, whisk together the soy sauce, vinegar, and chili oil.
- Assemble the Wonton Noodles:
- Divide the noodles among serving bowls.
- Top with the wontons and drizzle with the sauce.
- Garnish with chopped scallions and serve immediately. Tips Roll the wonton wrappers as thin as possible for a more delicate texture.
Adjust the seasonings in the filling to your taste.
Drain the noodles immediately after cooking to prevent them from sticking together.
Customize the sauce to your liking by adding more or less of each ingredient. Additional Suggestions Add other toppings to your Wonton Noodles, such as cooked bok choy, roasted duck, or叉烧 (Chinese barbecued pork).
Use store-bought wonton wrappers and filling to save time.
For a more traditional Wonton Noodles experience, use bamboo noodles.
