Black Rice Pudding with Coconut Milk

Ingredients:

For the Black Rice Pudding:

 1 cup black rice

 2 cups water

 1 can (13.5 oz) full-fat coconut milk

 1/4 cup granulated sugar (or to taste)

 Pinch of salt

 Optional:

     1/2 teaspoon vanilla extract

     A pinch of ground cinnamon

For Serving:

 Additional coconut milk

 Fresh fruit (such as mango, berries, or tropical fruits)

 Toasted coconut flakes

 Equipment:

 Medium saucepan

 Large bowl

 Instructions:

Preparing the Black Rice:

1. Rinse the black rice thoroughly under cold water until the water runs clear. This removes excess starch.

2. In a medium saucepan, combine the rinsed black rice, 2 cups water, and a pinch of salt.

3. Bring the mixture to a boil over medium-high heat.

4. Once boiling, reduce the heat to low, cover the pan, and simmer for about 45-60 minutes, or until the rice is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Black Rice Pudding with Coconut Milk

Creating the Coconut Milk Pudding:

1. While the rice is cooking, open the can of coconut milk and stir it well.

2. Once the rice is cooked, gradually stir in the coconut milk and sugar into the rice mixture.

3. Continue to cook over low heat, stirring frequently, until the pudding has thickened and reached your desired consistency (about 5-10 minutes).

4. If desired, stir in the vanilla extract and cinnamon at this point.

Serving:

1. Let the pudding cool slightly before serving.

2. Ladle the pudding into bowls and top with additional coconut milk for a richer flavor.

3. Garnish with fresh fruit and toasted coconut flakes for a delightful crunch.

 Tips:

 For a richer flavor, use full-fat coconut milk.

 Adjust the sweetness to your taste by adding more or less sugar.

 You can also add other flavorings like cardamom or star anise to the pudding.

 For a thicker pudding, cook it for a longer period.

 If the pudding is too thick, add a little bit of water or coconut milk to loosen it up.
