Stir-fried Chinese Mushrooms

Ingredients:
1 pound Chinese mushrooms (such as shiitake mushrooms, enoki mushrooms, or oyster mushrooms), cleaned and sliced
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon grated ginger
1 red bell pepper, thinly sliced
1 cup broccoli florets
1/4 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon honey
1 teaspoon sesame oil
Salt and pepper to taste

Instructions:
- In a small bowl, whisk together the soy sauce, oyster sauce, honey, and sesame oil. Set aside.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the garlic and ginger and cook for 30 seconds, until fragrant.
- Add the mushrooms and bell pepper and cook for 5 minutes, or until the mushrooms are softened and the bell pepper is tender-crisp.
- Add the broccoli florets and cook for an additional 2 minutes, or until the broccoli is tender-crisp.
- Pour in the sauce and stir to coat the vegetables.
- Season with salt and pepper to taste.
- Serve immediately over rice or noodles.

Tips:
For a more flavorful dish, you can marinate the mushrooms in the soy sauce mixture for 30 minutes before cooking.
If you don’t have broccoli, you can substitute another vegetable, such as snow peas, carrots, or zucchini.
You can also add protein to this dish, such as chicken, shrimp, or tofu. Simply cook the protein in the wok before adding the vegetables.
