Stir-fried Pea Shoots

Ingredients:
200 grams (7 ounces) pea shoots
2 cloves garlic, minced
3 slices ginger, thinly sliced
3 tablespoons vegetable oil
Seasonings:
1 teaspoon oyster sauce
2 teaspoons soy sauce
1 tablespoon Shaoxing wine or rice wine

Instructions:
- Wash the pea shoots thoroughly and remove any tough stems or leaves.
- Mince the garlic and thinly slice the ginger.
- Heat the oil in a wok or large skillet over medium-high heat. Add the minced garlic and sliced ginger and stir-fry until fragrant, about 30 seconds.
- Add the pea shoots to the wok or skillet and stir-fry for 2-3 minutes, or until the pea shoots are wilted and slightly tender.
- Add the oyster sauce, soy sauce, and Shaoxing wine or rice wine to the wok or skillet. Stir-fry for another 30 seconds, or until the sauce is evenly distributed.
- Serve the stir-fried pea shoots immediately over steamed rice or noodles.

Tips:
Do not overcrowd the wok or skillet when stir-frying the pea shoots, as this will prevent them from cooking evenly.
If you do not have Shaoxing wine or rice wine, you can substitute with a dry sherry.
You can also add other ingredients to this dish, such as shrimp, mushrooms, or tofu.
Additional notes:
Pea shoots are a good source of vitamins A, C, and K, as well as fiber.
They are also a low-calorie food, making them a healthy addition to any meal.
Pea shoots are best eaten fresh, so use them within a day or two of purchasing them.
